(The
following serves two - but is can be modified to serve more.)
Eggs
1/2
white or yellow onion
2 Tablespoons chopped green bellpepper
2 Tablespoons red bellpepper
1/2 - 1 cup cubed ham
Saute the above ingredients in about 1/2 stick of butter (I never
use margarine) until the vegetables are opaque and the ham is cooked.
Pour
6 eggs that have been seasoned and beated - let them cook for a couple
of minutes then stir the mixture.
Sauce

Tablespoons butter
1 Tablespoon flour
1 Cup milk
1 Cup grated cheddar cheese
2 - 4 Drops tabasco sauce
Salt & Pepper to taste
Melt
better over medium heat - add flour salt until smooth - add milk -
just heat through, do not broil, - add cheese and tabasco sauce (optional)
- salt and pepper to taste.
Plate eggs and spoon sauce over them. Garnish
with grated cheese and chopped green onions.
