-Place
the peppermint in a heavy-duty plastic bag and crush (I use a hammer
- there will be some larger pieces, but try to crush the majority
to a fine consistency)
-Melt
chocolate chips either in a double boiler or in the microwave (one
minute on high - make sure not to heat them too long, they burn
or become rock candy)
-When
melted, immediate stir in butter and peppermint flavoring - stir
until smooth
-Add
crushed peppermint, stir and pour onto a cookie sheet covered with
wax paper or parchment paper
-Press
the larger peppermint pieces on top
-Chill
for about an hour and then break into pieces
